(always organic where possible, naturally
1kg, skinless chicken thigh fillets, cut in 1 inch strips or chunks
1 leek sliced.
1 eggplant cubed
2 carrots diced
1 medium sweet potato
8 mushrooms quartered
1 cup chicken or duck stock
1 packet of Herbies Chermoula mix
Mix all ingredients together in the slow cooker/Crockpot. Cover and cook on low for 5 hrs -6 hrs or until chicken is tender.
Serve with fresh steamed beans and /or Quinoa.
