Chermoula Slow Cooked Curry

Ingredients:

(always organic where possible, naturally

 

  • 1kg, skinless chicken thigh fillets, cut in 1 inch strips or chunks

  • 1 leek sliced.

  • 1 eggplant cubed

  • 2 carrots diced

  • 1 medium sweet potato

  • 8 mushrooms quartered

  • 1 cup chicken or duck stock

  • 1 packet of Herbies Chermoula mix

 

Procedure:

 

Mix all ingredients together in the slow cooker/Crockpot. Cover and cook on low for 5 hrs -6 hrs or until chicken is tender.

 

Serve with fresh steamed beans and /or Quinoa.
